What up? I hope you are having a vibrant day. My day is great. My husband ended up taking the day off last min. so it has changed up our Monday in a positive way. We all went to the skate park. The kids like to ride their scooters around and Justin does his skate board. Me, well I ran there, did some planks there, played with the kids and then ran back. Now it is almost lunch time and I wanted to get a blog post in before I am off to make lunch. Being a busy mom that home schools, meal plans, runs the house hold and blogs I like to make things as simple as possible if I can at least with food. Mornings are such a busy time for everyone so I wanted to share a way we get around having to spend too much time preparing a healthy meal in the morning and that is preparing things the evening before, or sometimes on Sunday preparing for several days at one time. While a lot of days we do smoothies we sometimes do Over Night Oats to change it up. It is simple, inexpensive, healthy and very versatile. It is great for on the go, camping or weekend get aways if you are not wanting to spend the extra money out or having to worry about healthy options.
Oats are high in fiber and protein, and are gluten free(make sure you buy the gluten free oats though so you know they are not processed in a factory that handles wheat gluten).
So here is my simple recipe. Play with it. Make it your own. You can flavor it in so many way with all kinds of delicious fruits.
- 1 mason jar
- 3/4 cup oats
- 1 tablespoon maple syrup
- 1 tablespoon chia seeds
- 1 cup almond milk
- Place all ingredients in the mason jar, put lid on and shake to mix all the ingredients.
- Place in refrigerator over night.
- Heat up the next morning.
- Add desired fruit and nuts to it and go.
