Hey guys! I hope you all had a wonderful weekend. Ours was pretty good. We spent a lot of time with friends. Our neighbors are weekenders, and happened to be here this weekend so we played a lot. The kids were non stop play all weekend. They loved it. We had beach time, back yard hang outs and even spent some time at a local brewery celebrating a friends college graduation. Sat. evening J and I sent the kids to the grandparents so we could have a little date night which was cut short with a migraine. If I did not feel so good the rest of the days without migraines I would be really discouraged, but I know that the healthy lifestyle I am leading is the right way to go. Patience, one day I will not have them….
Anyway! Today I wanted to share with you one of our frequent weekend breakfasts! It is simple, delicious, healthy and only requires 4 ingredients.
BANANA OAT PANCAKES!
The 4 ingredients for the pancakes are oats, vanilla extract, nut milk(almond is what I use) and bananas.
You blend all the ingredients together in a blender or food processor, and you have your pancake mix!
Once the mix is ready I heat my skillet and coat it with coconut oil.
Once the skillet is hot enough I spoon about 2 table spoons worth of mix per pancake onto the skillet. Let cook on that side and flip when ready.
A lot of times we will pair it with vegan sausage and fruit and it is oh so delicious and satisfying. Below is the sausage we get. We all love it! Especially Belle. She has had the hardest time with cutting meat out of her diet and is picky about any meat substitutes but really loves this one. We don’t have meat substitutes all the time as they are processed and we mainly eat a whole foods diet, but they are occasionally a treat!
We top with Maple Syrup and enjoy!
I cut out gluten a few months back, so I no longer eat the sausage so this last plate was mine.
This recipe was basic. I have added chia seeds to the mix and we have also toped with berries, a smoothie mix etc. Add to it what you wish!
- 2 ripe bananas
- 3 cups oats
- 2.5 cups almond milk (or other nut milk)
- 2 tsp vanilla extract
- Blend oats until they are a flour like consistency.
- Add milk and blend
- Add bananas and vanilla extract blend
- Coat heated skillet with oil(I used coconut oil)
- Pour Mix (I use about 2 table spoons per pancake)
- Cook until done
- Add maple syrup and other toppings and enjoy!
