Hey there all you wonderful people how are you? Me? Well I am great. I had the great pleasure of meeting Fully Raw Kristina this week. If you don’t know her she owns Rawfully Organic a co-op in Houston. www.rawfullyorganic.com She is also a huge health advocate www.fullyraw.com and is the one who helped inspire me to go vegan. We are also kid free for the rest of the week! I miss my babies already, but will enjoy the time for myself. Yesterday I got to do Buti Yoga, clean the house, read, listen to podcasts, work on my blog and then had a girls night in! So fun! Today I will be going to see Bad Moms with some girlfriends, and then we will have friends from Austin coming in for the weekend! Can we say Beach Days! Yay! I will also be doing some running, and more Buti Yoga over the weekend.
So, today I wanted to share a recipe that I absolutely LOVE! This recipe came from some other wonderful women that are a big inspiration to me. The recipe is from Loni Jane. You can follow her on instagram @lonijane. She has a beautiful account with a ton of delicious food inspiration. She also has two e-books that you can purchase. The link is in her insta bio. I have not purchased them yet but plan on it. I just recently came across Loni Jane through Ellen Fisher who I have been following for over a year and who is a big inspiration to me. Ellen has a You Tube Channel @ Mango Island Mamma and a beautiful instagram @ellenfisher. Ellen has an e-book as well that I have purchased and it has amazing recipes. The link is in her insta bio as well. While watching on of Ellen’s videos one day she was eating the Rawnola from Loni Jane and gave the recipe. When I tried it I absolutely LOVED it. This recipe can be a meal that you top with fresh berries, bananas etc. or it can be a little snack. I have had it both ways. It is healthy, low in fat(other granola has a pretty high fat content) and will give you great energy. It is great for on the go, beach days or whatever. It is easy to make and only has 4 ingredients. I hope you enjoy as much as I do!
- 1 cup oats
- 8 dates (add more dates if you want it more sticky, put less in if you want it less sticky and more oaty)
- 2 tablespoons coconut flakes
- 1 tablespoon cacao nibs
- Place all ingredients in blender and pulse until all mixed and it is the consistency you like.
- Be creative too. You can add other things like nuts, seeds or other dried fruit if you like. Have fun! Enjoy!
